Beef and Kale Soup – Paleo

This is a soup that is pretty quick to whip up if you already have broth available.   Recipe follows.


  • 2 lbs grass fed sirloin steak, trimmed and cut in small pieces
  • 3T extra virgin olive oil or cooking fat of your choice
  • 1 large onion, coarsely chopped
  • 5 cloves garlic, minced
  • 1 can organic tomatoes, diced
  • 2T red wine vinegar
  • 1.5 t coarse sea salt
  • 1 t dried rosemary crushed
  • 2 t Penzeys beef roast seasoning
  • 8-10 cups of beef bone broth (or beef broth)
  • 1 bag frozen kale (I used 365 Organic Curly Kale from Whole Foods)

Heat oil over medium heat in a large dutch oven or other large, heavy pot.  Add beef, onion and garlic.  Cook until meat is browned, stirring frequently (about 10 minutes).  Add all other ingredients except kale.  Cover and simmer for 40 minutes.  Add kale and simmer an additional 15 minutes.  Serve!
