Primal (not quite Paleo) Pomegranate Dark Chocolate Cups

Here is a simple dessert to make with the in-season Pomegranate.  The tartness of the pomegranate in contrast with the bittersweet chocolate is divine.  These little chocolate desserts are not quite Paleo as there is sugar in the dark chocolate but they do qualify as Primal.  Sadly, the Divine brand chocolate has Soy Lecithin.  You may sub any chocolate you like.

Ingredients:

  • 3-3.5 oz. Dark (85%) chocolate
  • 1t Coconut Oil
  • Fresh Pomegranate Arils from Large Pom

Clean Pom to get arils (seeds).  We used 80% of the arils and this made 12 large candies.  How to clean a pomegranate.  Place 12 paper mini-cupcake papers on a cookie sheet.  Fill each paper 2/3 of the way with pomegranate arils.

Meanwhile, in a small saute pan on lowest possible heat, melt chocolate with coconut oil, stirring continuously.  The coconut oil will make for very smooth chocolate and also makes the chocolate less likely to burn if you accidentally warm too vigorously.   Next, spoon a teaspoon or a little more than a teaspon of chocolate over each of the cups, covering the arils.  Add a little more chocolate if needed to use entire amount of melted chocolate.  Top with a few extra arils to make them pretty.  Place cookie sheet in freezer for 5-6 minutes or in fridge until set.  Enjoy!  YUM!
