Butternut Squash with Bacon and Kale

This is the side dish we had with the pork and apples tonight.  This huge skillet of squash was only 1/2 of the butternut squash that hubby brought home from the market.  It was one HUGE squash.

I did some web searching for a recipe and found two similar recipes, this one over at Everyday Paleo and this one over at Paleo Intensified.  Here is the final recipe I came up with following my research:

  • 6 oz. bacon, chopped
  • 1 Butternut Squash (or 1/2 very large sqaush) peeled, seeded and cut in 3/4 inch cubes
  • 4 cups frozen chopped organic Kale
  • 1/2 medium onion finely diced
  • 2T balsamic vinegar
  • 1T olive oil
  • Salt/Pepper to taste

In a large, heavy skillet over medium heat, fry bacon.  Remove bacon to a bowl with slotted spoon, reserving rendered fat.  While bacon is frying, put squash in 3-4 qt saucepan covered with water and boil until cooked, but still firm.  Drain squash.  Meanwhile, add onion to the reserved bacon fat.  Once the onion is translucent, add the kale.  Stir and cover to steam the kale for 2-3 minutes.  Remove cover and carefully stir in squash being careful not to mash.  Add salt/pepper as desired.  Sprinkle with balsamic and olive oil and reserved bacon.  Carefully turn/stir with a spatula to incorporate additions.  Serve!

This recipe served 6 as a side dish with approximately 1/3 of the recipe left over.
