Paleo-ish Spaghetti Squash Casserole

I say -ish because I did put 2 oz. of shredded organic cheese on top of the casserole… if you are a purist, not quite paleo.


  • 1 large Spaghetti Squash
  • 1 large onion chopped
  • 4 cloves garlic minced
  • 3 T EVOO
  • 1 lb grass fed ground beef
  • 1 t basil
  • 1 t Italian seasoning blend
  • 2 pasture eggs
  • 1 can 14.5 oz diced tomatoes with juice
  • salt/pepper

Halve, seed and cook squash (micro or bake).  Scoop out cooked squash into a large bowl.  Saute next 6 ingredients in a large skillet until beef is cooked.  Add to bowl with squash and stir until well incorporated.  Beat eggs in a small bowl.  Add tomatoes and stir until combined.  Pour egg mixture over squash/beef, add salt/pepper and stir until combined.  Pour into a large casserole (4qt) and top with cheese if desired (not required).  Bake at 400 degrees for 35 minutes.  Remove from oven and let set for 10 minutes before serving.
